I. love. to. cook! However, I do not like doing dishes :) I'm so thankful for a sweet husband that has agreed that if I cook, he will clean. Saying we were excited to move off seminary campus into a townhouse that has a dishwasher is an understatement. Here is a list of meals I am planning on making next week. (Since most dishes are made for 4-6 people we usually eat dinner leftovers for lunch the next day)
Breakfast
Strawberry Stuffed French Toast
Sausage Breakfast Casserole
Strawberry Granola
Sausage Breakfast Burritos
Green Almond Smoothies
Lunch/Dinners
Sweet Barbacoa Pork with Cilantro Lime Rice
Spicy Shrimp Tacos with Pineapple Salsa
Baked Creamy Chicken Taquitos
Strawberry Balsamic Salad
Chicken Caesar Sandwiches with Coconut Grilled Corn
Dessert
Brownie Peanut Butter Cup Surprise
Strawberry Lemon Smoothies

Blessings...
Monday, Feb. 25th - Today is my sweet sister-in-law's 30th birthday. It has been a true blessing to watch the Lord work in her heart over the past several years. Happy birthday, Shannon! We love you!
Tuesday, Feb. 26th - This morning when I walked into Catie Bugs room, her little legs started moving like crazy. She was beyond excited to see me. She smiled really big as I began to tell her "Good Morning!" I picked her up and she immediately put both hands on my face, opened her mouth and went in for a big kiss. MELT MY HEART!! (I've been trying to teach her "kiss" and "hug")
Wednesday, Feb. 27th - Tonight, 2 hours after Cate went to bed, I heard her crying. I gave her a minute to find her paci but instead she continued to cry. This is not normal, so I ran upstairs to see what was wrong. I saw that she didn't have her paci so I put it in her mouth, rubbed her head for a minute and walked out of the room. But right as I shut the door she began to cry again. I opened the door, picked her up and rocked her in my arms. I sang "Momma loves you" and she fell right asleep. (I guess she needed some extra Momma snuggles tonight) If you know Cate, you know, she is the most independent lil girl. Nick and I never hold her like a baby anymore, let alone rock her because Miss Independent does not have time for her head to be down - even in a dark room she must be looking at the world, discovering new things. Curious little bug! But not tonight, tonight I was able to rock her until my back couldn't hold her anymore. I stole many kisses and enjoyed every second! I love you, my sweet Sunshine!

Thankful...
I decided I needed to write down one thing a day that I am thankful for. A blessing. I want to be able to look back and see all that the Lord has done in our lives.
Monday, Feb 18th - A friend handed me a note before working out and said "I don't know who this is from but someone gave this to my husband for you and Nick" Later that night Nick and I opened the envelope...someone wrote us a note saying God had given them an unexpected blessing and also placed it on their hearts to share some of it with us....$120! Wow!
Tuesday, Feb 19th - George and Kerstin came to visit! They watched Cate so Nick and I could go on a date. They also brought us our favorite treats and diapers.
Wednesday, Feb 20th - We went to lunch with George and Kerstin - love family time.
Thursday, Feb 21st- Went to Thursday morning Bible Study about prayer - good fellowship, prayer and time in the word.
Friday, Feburary 22nd - I spoke with a nurse at Kosairs about Cate's upcoming surgery and he said "You will be shocked how quickly Cate will bounce back, even by the time you go home" Great news for my mommy heart!
Saturday, Feb 23rd - I got the stomach bug but Nick gave up many hours of sleep to take care of Cate so I could sleep. Then when he got home from valet he could not have been more loving in taking care of me.
Sunday, Feb 24th - I was able to eat today - yay!

Cate Summary: 6 months
Dear Cate,
Yesterday, Daddy and I took you in for your 6 month check-up. I cannot even begin to explain what a blessing East Louisville Pediatrics is to our family. All the doctors, nurses, and staff are incredible. You are a 20.01 pound sake of potatoes, as the nurse called you. (96-98%). 25 1/4 inches in height. (25%) and you have a 17 3/8 inch head (80%) The doctor and nurse squeezed and played with your "hammies" and went on and on about how beautiful you are. At this point you have eaten oatmeal, pears, carrots, and peaches. You love fruit! I can't get it in your mouth quick enough :) You tolerate carrots. Sometimes you like them and sometimes you don't. Oatmeal on the other hand, well, you don't like the texture at all. You lean as far back as you can in the bumbo and seal your lips so shut that I cannot even tell you have lips anymore. ha! I have to "fly" or "train" the oatmeal into your mouth. You smile at the funny sounds I make and I slip the spoon right in. :) You are the sunshine of my life!! Oh how I love you! Two days before your 6 month birthday you started putting the paci into your mouth all by yourself at night. One part of me is SO proud of you but the other part of me is so sad you don't need me at night anymore. I love getting a full nights sleep but I also miss seeing you at night.
Schedule -
7am - 7 oz of formula (Enamil Infant -yellow) (Daddy does this feeding so Mommy can sleep until 9:30-10am. You LOVE your Daddy! Sometimes I wake up to help Daddy but you normally don't notice I'm around - all eyes are on your Daddy. He loves to make you laugh and you think he is hilarious)
Nap - 8- 9:30-10am
10am- Oatmeal, a solid and 7 oz of formula. (You normally don't eat everything)
Nap- 11:30-12:15 (this nap keeps getting shorter and shorter)
1pm- 7oz of formula
Nap 2-4pm
4pm- Solid and 7oz of formula
No Nap!
7pm- 9oz of formula (sometimes you don't take all of it)
Bed @ 7:30pm (We say prayers with you, kiss your forehead, and walk out of the room. You go right to sleep everytime)
You love-
Bath time, grabbing your toes, fans, light, fruit, car rides, walks, getting your ears cleaned out, your exersaucer, and your "friends"
You are not a snuggler, at all. You are very curious about the world around you and don't have time to put your head down for one minute. I started teaching you how to drink from a sippy cup and straw today. You did really well with the sippy cup but you weren't too sure about the straw. Oh well, we will try again tomorrow.
My heart forever,
Mommy
